Chokeberry or chokeberry, the international Latin name Aronia melanocarpa is a plant of the Rosaceae family, is a shrub up to three meters high, with oblong elliptical leaves. Blooms in June-July, with white or Pink colour, connecting in corymbose inflorescences. The fruits are spherical, up to 15 mm in diameter, black in color, sweetish-sour in taste.

The homeland of this plant is North America, for a long time this plant was decorative, only thanks to Michurin it spread throughout Russia and the countries of the post-Soviet space.

Ripe chokeberry berries are eaten and used for medicinal purposes. The chemical composition of fruits includes: sugars (up to 10%), organic acids (malic, etc.), a whole complex of vitamins (P, C, K, E, A, B1, B2, B6) and trace elements (iodine, fluorine, iron , boron, copper, manganese, molybdenum, cobalt, zinc, nickel, chromium, etc.), as well as pectins, tannins, flavonoids and anthacyanins.

Chokeberry is a champion in terms of the content of nutrients, it contains twice as much vitamin P as in blackcurrant, and 20 times more than in apples and oranges. 1 g fresh berries covers daily requirement a person in vitamin P. The content of vitamin C is the same as in lemon, but there is four times more iodine than in strawberries, gooseberries and raspberries.

Chokeberry, in addition to a piquant tart sweet and sour taste, has a wide range of pharmacological properties: radioprotective (removes heavy metals and radionuclides from the body), anti-inflammatory, anti-allergenic, diuretic and choleretic.

The use of chokeberry berries has a positive effect on digestion, the secretory function of the stomach increases, appetite improves, and the berries are also able to normalize arterial pressure(high decreases, and normal remains at the level) and affect blood clotting (if clotting is poor, then it improves, and if blood clotting is normal, then mountain ash has no effect). Also, chokeberry is recommended for use in violations of the functioning of the thyroid gland (thyrotoxicosis) and as an immunoenhancing agent. Chokeberry is used externally for allergic skin lesions (eczema, neurodermatitis).

Juices, jelly, jam, jam, marmalade, jelly, liqueurs, wines, tinctures are prepared from chokeberry berries. Also in the food industry, a natural dye obtained from chokeberry berries is used. Dried berries are used to make fruit teas. Mountain ash is perfectly preserved at a temperature of 0 ° C, while all vitamins and nutrients are preserved.

Fresh and dry berries, juices and other dishes from chokeberry are useful for everyone, both children and adults, a number of contraindications exist only for those people who suffer from gastric and duodenal ulcers, as well as gastritis with high acidity.

Recipe for homemade chokeberry wine

The recipe for homemade chokeberry wine is my signature recipe. For several years in a row, every autumn I have been using it to make wine. Wine from chokeberry is stored quite well, it has an excellent taste, a beautiful dark ruby color. Probably, this wine can be called the most delicious of all that I make.

First, we prepare the wine sourdough. Usually I take raspberries for wine sourdough, but if the season has passed and there are almost no raspberries left in the garden, it doesn’t matter. In spite of everything, it is necessary to collect and put into action all the remnants of raspberries and strawberries. And as the main source of wine yeast at this time, I use rose hips. So, we collect berries (about 2 cups) and unwashed! put in the bank. If the berries are washed, then all the natural yeast that is on the surface of the berries will disappear.

We fall asleep with 2 tablespoons of granulated sugar, pour 0.5 liters of cold water, tie the neck with 4-layer gauze and leave for 3 days. Periodically, the mass must be stirred. After 3 days, the wine starter will begin to ferment actively and can be used to make wine.

Grind 3 kg of chokeberry (I don’t wash it either) in a food processor (you can crush it with a pusher), pour the mixture into a bucket, add wine sourdough.

Now you need to add sugar and water.

Water should be taken 3 liters. I always filter the water, let it settle. If possible, it is better to take well water.

We measure 2 kg of sugar, prepare sugar syrup with a small amount of water from an already measured measure. Pour into a bucket of chokeberry only cooled down, so as not to damage wine yeast! Thus, we have prepared wine must.

We tie the bucket with 4-layer gauze and leave it for 8 days for active fermentation. During this time, you can stir the wort 2-3 times a day, because. the berries float to the surface and form a crust that prevents the access of oxygen.

The most time-consuming work comes after 8 days, when the must must be filtered from the berries.

Of course, you can use a juicer, but I filter the wort by hand, through cheesecloth. Squeeze the remaining berries of the chokeberry properly (to get about 2-3 more cups of liquid).

Pour the strained wort into a 5-liter bottle from under mineral water. Get about 4 liters. We close the lid and arrange a water seal. For this, it is very convenient to use a blood transfusion system, which can be bought at a pharmacy. We stick a thick needle into the lid, lower the other end of the tube into a liter jar of water. For tightness, you can close up the edge of the lid and the place where the needle was inserted with plasticine.

We put in a cool (20 degrees) shaded place. I leave in the apartment under the table. After 2 days, slow (quiet) fermentation will begin. Air bubbles will start to come out of the tube. Periodically, the bottle with the wort must be gently shaken.

After 40 days, fermentation will stop, the wine must be bottled through the same tube from the system using the driver's method, using the principle of communicating vessels. We put a bottle of wine on the table, a bottle on a stool nearby. We lower one end of the tube into the bottle, suck a little wine and lower the other end of the tube into the bottle. If everything was done correctly, then now you will feel that the wine is delicious. But it's not ready yet. He must be allowed to stand for about 2-3 months right in the bottles.

Thus, around the New Year, we will have excellent wine from chokeberry ready.

Try it, no hassle, and the result exceeds expectations!

Chokeberry juice for the winter can be prepared at home, providing yourself with an excellent vitamin product that will come in handy in winter, and especially in early spring.

What is useful chokeberry

This tree has nothing to do with mountain ash. Botanists call this species Aronia chokeberry from the genus Aronia of the Rose family.

This plant comes from North America, where it grows in the same harsh conditions as its pseudo-relative, mountain ash.

The ability to survive in harsh conditions, as well as tasty and very healthy fruits, made this tree an ordinary fruit crop, which is bred where the winter is long, the frosts are strong, the snow is deep.

Aronia fruits have a sweet and sour tart astringent taste. Their color ranges from completely black to almost dark red. Useful properties are due to the peculiar chemical composition of the fruit. They contain:

  • proteins - 1.6%;
  • fats - 0.3%;
  • carbohydrates - 20%;
  • carbohydrates are dominated by glucose, fructose and sorbitol (a sugar substitute used by diabetics);
  • vitamins - P, C, E, PP, B1, B2, B6, B9, carotene;
  • minerals - calcium, potassium, magnesium, lead, iron, sodium, phosphorus, boron, fluorine, molybdenum;
  • tannins.

The undoubted benefits of chokeberry for the body are highly valued both in folk and official medicine. Fresh, as well as in infusions, decoctions and tinctures, chokeberry fruits are recommended for use in such pathologies:

  • hypertension;
  • typhus;
  • rheumatism;
  • scarlet fever;
  • measles;
  • liver diseases;
  • anemia;
  • beriberi.

That is why it is so important to grow a large crop of chokeberries, harvest it and prepare it for the winter with minimal loss of nutritional value.

How to make chokeberry juice

Chokeberry juice, harvested for the winter, should have two properties - to be useful and as sterile as possible. Combining these two properties is difficult, but possible. The benefits of chokeberry from the canning process are reduced, but not by much.

At home, you can get juice from aronia chokeberry using a juicer or juicer. In addition, you will need: a sieve, preferably metal, a large enameled bowl, a saucepan, also enameled and large.

Juice preparation is carried out as follows.

  1. Preparation of berries for processing. Fruits need to be sorted out, removing unusable specimens. You also need to remove all debris and legs from the berries.
  2. Extraction of juice. If you have a juicer, then this canning step will be the easiest. Let the juicer work and press the blackberry juice for you. If there is no such device, then you can pass the berries through a meat grinder, and put the gruel on a sieve and rub it. You can also wrap the gruel in gauze, then put this bag on a sieve or in a colander, placing a load on top. Under the pressure, the juice will drain until the excess water in the berry gruel runs out.
  3. Sugar is added to the resulting juice in the amount of 100 g per 1 liter.
  4. Juice is poured into sterilized jars. Then these vessels are placed in a saucepan with hot water for pasteurization. This pot should be on low heat. To prevent the jars from bursting, you need to put a grate or a thick layer of fabric on the bottom. Banks should stand in boiling water for at least 20 minutes.
  5. You need to get the jars hot from hot water. They also need to be sealed with lids while hot. After that, each jar needs to be wrapped in a blanket and left in this form for 10 hours.

With this technology, many beneficial features chokeberry fruits are stored for a long time. Just store juice jars in a dark, cool place. If after some time the lid on the jar is swollen or clots of a different color appear on the surface of the juice, then such juice will have to be thrown away without hesitation. This means that the pasteurization took place in violation of the rules.

If you have a juicer, the process of harvesting juice is greatly simplified. Place the peeled berries on top of the juicer. Place the unit itself in a container for collecting juice.

This whole structure must be put on fire. When the first signs of condensation appear, heat the juicer very carefully so as not to destroy the beneficial properties of the berries. When the juice appears, sugar can be added to it in the proportions indicated above.

The duration of the juice cooker on fire is measured approximately 1 hour. After that, you need to open the tap, ensuring that the juice drains into a bowl. The pasteurization procedure described above is no longer necessary. Just pour the juice into jars, and then seal them tightly. In this case, you can skip the wrapping procedure in a blanket. It is enough to put the jars on the lids, wait for the juice to cool completely, and then transfer the vessels to the place of permanent storage.

How to make fruit drink from chokeberry

This drink is not subjected to heat treatment, but is consumed within 1-2 days. It retains all the properties of the fruits of this wonderful plant.

Morse from chokeberry is a tasty and very healthy drink, berry juice diluted in water.

In order to prepare fruit drink from chokeberry, it is necessary to grind clean and selected berries into gruel. This can be done in a blender or in a meat grinder. Crushing the berries into a homogeneous gruel by hand will be difficult, as the berries quickly stick together like a soufflé. In order for this sticking process not to interfere with the production of the drink, add a little water to the gruel.

In the finished berry puree you need to add clean cold water. The proportions of water and berries are determined by taste. It is best to proceed as follows:

  • crush the gruel in a strainer, let all the pure juice drain;
  • put the rest of the gruel in a bowl, add water, mix thoroughly;
  • drain the water into a bowl with juice, rubbing the gruel through a sieve again.

This procedure can be repeated until the water mixed with the remains of the berries ceases to turn red. Now all the useful properties have been transferred from berries to fruit drinks.

The solid components of the berries can be used as a filling for pies, for adding to porridge, kissels, compotes, etc.

Sugar can be added to fruit juice to taste. It is usually drunk chilled in the heat. Mors can be harvested for the winter in the same way as juice. To do this, it is poured into jars, already slightly sweetened, and then sterilized in a water bath in the manner described above.

What is better to harvest for the winter - juice, fruit drink or the berry itself? Everyone solves this problem of choice for himself.

Advantages and disadvantages of different methods of harvesting chokeberry

The easiest way is to quickly freeze the berries. To do this, they need not only to be sorted out, but also slightly dried. After that, the berries are placed in a plastic bag or container and placed in the freezer. Frozen berries can be used in any form. Then it is very easy to make fruit drink from it, because the thawed berries become soft, and the liquid contents flow out by themselves. You just need to slightly rub the berries on a sieve.

Harvesting juice is a laborious process, but if there is no large freezer, this is the most The best way prepare useful product for the future. Juice is a highly concentrated liquid. Many people can drink it only in a diluted form, so one can of juice will last for a long time.

Harvesting fruit drink makes sense. After all, this is the same juice, only diluted. It can be consumed immediately in the form in which it is prepared. However, such canning requires a lot of jars and space.

So each person can choose the options for blanks according to their capabilities and needs. The main thing is that there are always a lot of chokeberry berries.

Morse is beautiful and healthy drink known for a long time. Subject to the cooking technology, all vitamins are preserved, since it does not boil. Any berries are suitable for fruit drinks (lingonberries, cherries, strawberries, etc.), including chokeberry. Morse from chokeberry turns out to be very fragrant, with a tart taste, sugar is put to a minimum, since chokeberry is a rather sweet berry. Morse is better to drink chilled, if there is no time, then you can put a few ice cubes in the decanter.

The word "mors" has Byzantine roots, where water with honey was called mursa. So "mursa" was transformed into the "mors" known to us.

For fruit drink, sort out the chokeberry, cut off the branches and wash well.

Place in a blender and puree until smooth. Chokeberry is a berry with thick pulp, so you can add 3-4 tablespoons of water to the blender.

This makes a thick puree.

Add boiled, spring or tap water to the berry puree.

Strain chokeberry juice through a strainer to get rid of flakes of pulp and skins.

In the resulting fruit drink, add sugar to taste, mix until completely dissolved and put in the refrigerator to cool.

Morse from chokeberry. Recipe with photo

Dear friends, for a long time I have not shared with you the recipes for delicious drinks. Today I decided to correct this situation, all the more there is a reason - I recently collected chokeberry berries from a bush. To be honest, not the most favorite berry in our family. But the bush grows, then let it grow for itself.

You don’t particularly eat the berry fresh, it is very dry and tart. I tried compotes from it, and jam, and sugared with whole berries - all this did not work for us.

Then I decided to make fruit drink out of it, everyone liked it. Of course, chokeberry is not an easy berry. It is not useful for everyone, and not everyone recommends it, but I think that sometimes you can afford a glass of such a fruit drink if you still feel good.

Morse from chokeberry. Recipe

Such fruit drink can be prepared from frozen or fresh chokeberry. But since it is stored for a long time, I do not freeze it, but I prepare a wonderful drink from this black berry according to the following recipe.

List of required products:

Energy value- 23.78 calories

100 g of this dish contains:

Wash the berries well, and then grind to a mushy state. I did this with a blender, but if you don’t have one, then use a regular meat grinder.

In the resulting berry mass, add half a glass of sugar and leave everything for several hours until the mountain ash releases juice.

In this form, I put aside the crushed mass and went to do household chores, and I started preparing fruit drinks after four hours.

Chokeberry contains: vitamins C, P, K, E and group B, iodine, iron, copper, manganese, selenium, fluorine, boron, potassium and molybdenum, as well as glucose, fructose and sucrose.

We take half a lemon, remove the zest from it and squeeze the juice.

We add everything to the chokeberry. Pour in half a liter of water. Put on fire and bring to a boil. As soon as it starts to boil, turn it off. Let the drink brew for 20 minutes.

After that, pour it into a jug or jar where it will be stored, but this must be done through several layers of gauze so that the fruit drink is clean without peel and pulp.

Chokeberry lowers blood pressure, strengthens and dilates blood vessels, increases their permeability.

As a matter of fact, the fruit drink is already ready, but you should try it first. Add sugar if needed. For me, it tastes a little sharp, so I added more boiled water.

Chokeberry should not be consumed by people with high acidity, stomach and duodenal ulcers, with increased blood clotting and thrombophlebitis.

As a result, the fruit drink turned out to be very tender, sweet, with a slight sourness and astringency. It is simply impossible to break away from it, I wanted to drink and drink. For some reason it seemed to me that it was in the form of heat that he especially revealed his taste and aroma.
